Stuffed Sirloin w/Mixed Mushroom Saute

Onion Stuffing (recipe below)
1 – 2 lb. Boneless beef top sirloin steak, cut 1 ½” thick
1 ½ C. sliced mixed fresh mushrooms (such as shiitake, oyster, & brown mushrooms)
1 Tbsp. margarine or butter
¾ C. beef broth
2 tsp. Cornstarch
2 tsp. Worcestershire sauce
2 Tbsp. dry red wine (optional)
1 Tbsp. snipped parsleyRecipe
- Prepare onion stuffing for steak. To make a pocket in steak, use a sharp paring knife & make a short horizontal slit in 1 side of steak. Insert knife into slit, drawing from side to side to form a larger pocket in steak. Spoon stuffing into pocket. Close the pocket with wooden picks inserted diagonally.
- For mushroom sauce, cook mushrooms in margarine or butter in a large skillet until tender. Combine beef broth, cornstarch, & Worcestershire sauce in a medium bowl; carefully add to skillet. Cook & stir until thickened and bubbly; cook and stir for 2 minutes more. Stir in wine & parsley. Keep warm while grilling steak.
- Grill steak on the rack of an uncovered grill directly over medium-hot coals for 18-22 minutes for medium doneness, turning once halfway through grilling time. Serve with mushroom sauce. Makes 6-8 servings. (I grilled ours on our gas grill, lid closed, low heat)
- Onion Stuffing: Cook 1 small onion, halved, sliced, & separated into rings, and 1 clove garlic, minced, in 1 Tbsp. margarine or butter in a large skillet until onion is tender but not brown. Stir in ¼ tsp. lemon-pepper seasoning.
