Dad’s (Hoots?) Turtle Soup Recipe

List of Ingredients
5 lb. Turtle meat (or hamburger)
5 lb. Boiling Beef
6 Med. Size onions
8 carrots (medium)
2 cabbage heads (medium)
8 hard boiled eggs
8 Bottles Brooks Tangy Catsup (small)
1 Gallon Tomato Puree
2 Bunches of celery
½ C. scotch barley (soak in luke warm water)
1 Pint whole kernel corn
Salt & Pepper
Recipe
Cook turtle & beef, pick meat from bones, strain & save broth. Grind all contents & add to broth. Add enough water to make about 9 – 10 gallons. Bring to boil & then let simmer for 3-4 hrs. (very important to simmer down)
Slice 3 lemons in soup & add pickling spice (1 small box – put in cheesecloth bag that is very roomy so spices can soak) Remove lemon slices when they become soft.
