White Chili

List of Ingredients
1 lb. great northern beans
2 lbs. chicken breasts
1 Tbsp. olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 (4 oz.) cans chopped green chilis
2 tsp. ground cumin
1 1/2 tsp. dried oregano
1/4 tsp. dried cloves
1/4 tsp. ground red pepper
5 C. chicken broth
1 (7 oz.) bottle beer
Optional:
3 C. monterey jack cheese

Cover beans with water & soak overnight. Drain. (or skip this step & use canned beans)Place chicken in large sauce pan. Add cold water to cover & bring to a simmer. Cook until just tender, about 15 minutes. Drain & cool. Cut into small pieces.
In same pot, saute onions until clear. Stir in garlic, chilis, cumin, oregano, cloves & red pepper. Saute 2 minutes. Add beans, broth & beer. If desired, stir in optional peppers. Bring to a boil, reduce heat & simmer until beans are very tender, about 2 hours. Stir occasionally.
Add chicken & 1 cup of cheese. Stir until cheese melts. Season with salt to taste. Serve with remaining cheese, salsa, & sour cream.
