Asparagus Roll-ups
Very easy, very elegant.
List of Ingredients
- 40 spears asparagus, cooked or canned
- 1 large package cream cheese
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream (or more for easy spreading)
- 2-3 tablespoons minced chives or green onions
- 1 red pepper, julienned into this slivers
- 2 loaves whole wheat or white bread
Instructions
- Remove crusts from bread slices. Flatten with rolling pin.
- Mix cream cheese, sour cream and mayonnaise together. Spread on bread slices.
- Place one asparagus spear and one sliver red pepper on each slice of bread. Roll up. Slice into 3/4-inch rounds.
Final Comments
This makes a large amount--roughly 240 pieces. Cut recipe in half for smaller servings.
Note: Minced green onion may be added to cheese mixture.
