BLT Dip

Recipe Introduction
I served this at bridge recently and it was a big hit. It can also be used as a salad dressing.
List of Ingredients
1/2 pound bacon, fried crisp and broken into pieces
2 cups fresh tomatoes, peeled, diced and drained in a colander
1/4 cup fresh basil, chopped
1 1/2 blocks cream cheese, softened (more or less, to taste)
1/4 cup feta cheese, if desired
2 tablespoons Balsamic vinegar
1/4 cup mayonnaise
1/4 cup sour cream, if desired
Salt and pepper to taste
Recipe
Combine ingredients in a food processor. Process until just slightly chunky. Chill 2-3 hours. Spread over a serving plate or large pie plate.
Right before serving, sprinkle finely chopped lettuce on top. If desired, add more diced tomatoes (drained) and maybe some green onions, sliced.
I served this with large homemade sourdough bread croutons and shredded wheat crackers.
Next time I'll substitute cilantro for the basil, but in the summer, basil and tomatoes can't be beat.
I'll also use the croutons to combine with the dip for a bread salad.
