Black Bean Relish
Almost fat-free. This works well as a salad, too. The Chinese chili sauce is what makes this relish different. There are similar recipes around, but this has more character.
List of Ingredients
- 1 can black beans, drained and rinsed (if desired)
- 1 can shoe peg corn
- 1 serrano and jalapeno, minced
- 1 can diced tomatoes or two large fresh tomatoes, chopped
- 1 red or green bell pepper, chopped
- 1 onion, chopped
- 1/4 cup white wine vinegar
- 1 tablespoon oil (opt.)
- 1/2 teaspoon salt
- 1 tablespoon Chinese chili sauce
- Tortilla chips
Instructions
- Combine ingredients. Chill well. Serve with tortilla chips.
Final Comments
I often use Rotel tomatoes instead of plain canned ones. They do increase the heat, though.
Maggie's husband Buddy wasn't too keen on black beans until he tried them this way. Now he's enthusiastic.
