Cold Curried Chicken Balls
My adaptation. The original recipe was a cheeseball. It was good, but I like this version better.
List of Ingredients
- 1 cup finely chopped cooked chicken
- 2 tablespoons chutney
- 2 tablespoons mayonnaise
- 1 tablespoon curry powder (or more to taste)
- 1/2 cup pecans, chopped
- 1 small cream cheese, softened
- Dash salt
- 2-3 drops Tabasco or other hot sauce
- 1 small can French fried onion rings
Instructions
- Mix first eight ingredients together (chicken through Tabasco). Chill. Shape into balls about 1 inch in diameter.
- Crush onion rings in food processor. Roll balls in crumbs. Chill. Spear with toothpicks.
Final Comments
Ground peanuts make a good alternative for the onion ring crumbs which tend to be a bit oily. Add a piece of fruit--pineapple chunks, 1/2 strawberry, banana chunk, mango sliver, etc. to the toothpick. Serve additional chutney on the side, if desired.
