    Leslie's Mushroom Dip

    Leslie invented this with ingredients she had on hand 4/24/99. Byron told her to write it down before she forgot it. When Byron is that effusive, the recipe's definitely a keeper.


    List of Ingredients


    • 2 large portobello mushrooms
    • 1/3 cup grated Asiago cheese
    • 4 ounces Mascarpone cheese
    • 1 large cream cheese
    • Dash cayenne
    • 6 cloves roasted garlic, peeled and mashed


    Instructions


    1. Rub portobellos with olive oil. Bake at 350 for 15 minutes. Chop fairly fine.
    2. Mix with remaining ingredients. Bake at 350 until bubbly, about 25 minutes. Serve with crackers or crostini.


    Final Comments


    The amount of garlic in this recipe is necessary because it's roasted. If using raw garlic, 1-2 cloves would probably be adequate.
