    Leslie's Tomato Tart

    Leslie has several versions of this. I like this because it's so EASY!


    List of Ingredients


    • 1 pie shell, pricked and baked at 425 degrees for 10 minutes
    • 3-4 tomatoes, seeded and drained on paper towels
    • 6 tablespoons fresh basil
    • 3 tablespoons fresh marjoram
    • 2 tablespoons fresh parsley
    • 1 clove garlic
    • 2 teaspoons olive oil
    • 1/2 teaspoon salt
    • 1/2 cup sliced black olives
    • 6 ounces soft goat cheese, crumbled
    • 1-2 more teaspoons olive oil


    Instructions


    1. Combine the six ingredients, basil through salt, in food processor. Process until finely chopped to make a paste.
    2. Spread herb paste over warm crust. Layer tomato slices in concentric circles over paste. Scatter olives and goat cheese over tomatoes. Drizzle with additional olive oil.
    3. Bake at 350 degrees about 20 minutes.


    Final Comments


    This too is best made in summer when garden fresh vegetables and herbs are available. Better make two at a time. Any leftovers are great for breakfast.
