Marion's Cauliflower Supreme
Years ago, I taught with John G. Whenever we had a party, John and his wife Marion would bring a different hors d'oeuvre. They never got to take home leftovers. Whatever they brought went first.
List of Ingredients
- 1 head cauliflower, broken into flowerettes, parboiled and quick-cooled
- 2 eggs, beaten until foamy
- 8 ounces Parmesan cheese
- Flour (instant type such as Wondra works best)
Instructions
- Mix cheese, flour, and eggs for a thin batter. Dip cauliflower pieces in batter. Fry on a griddle BARELY greased with margarine until evenly brown.
Final Comments
Marion used a block of margarine. She said it browned more evenly than stick margarine.
I've made these for us and have had some leftovers. I can eat them cold, but they do warm on a cookie sheet in the oven.
This is where I learned to use Wondra flour. It works well in gravies and sauces because it clumps up less easily than regular flour.
