    Party Crab Sandwiches

    These came from a friend in Greenbriar, VA in 1971. They are VERY rich. Although nice for a party, they also make a good main dish. Serve a salad and the meal is complete.


    List of Ingredients


    • 1 stick butter
    • 1 bunch green onions, chopped
    • 1/4 cup fresh parsley
    • 1 pint Half and Half
    • 1 pound Swiss cheese, grated
    • 1 pound crabmeat, picked over for shells
    • 1 loaf French bread


    Instructions


    1. Saute butter, green onions and parsley until onions are soft. Stir in Half and Half. Add the Swiss cheese. Cook over low heat, stirring constantly, until cheese melts.
    2. Fold in the crabmeat. Heat slowly until crab is cooked, about 10 minutes.
    3. Slice the French bread in half or diagonally into 1" slices. Lightly toast under broiler. Turn and toast second side. Spread crabmeat mixture on top. Return to broiler until sauce just barely bubbles. Do not allow to brown.


    Final Comments


    Crabmeat has become so expensive, this recipe will probably be reserved for special occasions or small cozy dinners.
