Roast Beef for Sandwiches
Recipe Introduction
I did this for a party and it was wonderful, wonderful. The meat is almost crispy on the outside, but very pink in the middle.
List of Ingredients
- 1 roast beef
- Seasoning salt (mine or Tony Cachere's)
- 1 can beef broth (or 2 cups homemade)
- Garlic cloves, if desired (I pierce the roast in several places and insert slivers of fresh garlic)
Instructions
- Preheat oven to 500 degrees. Place roast in open pan. Pour in beef broth. Roast exactly as follows:
- 4 1/2-5 pounds for 25-30 minutes
- 8-9 pounds for 40-45 minutes
- 11-12 pounds for 55-60 minutes
- Turn off oven. keep door closed for 2 hours.
Final Comments
Most high-heat recipes call for tenderloins, but I've done round and sirloin roasts with modest success. The tougher cuts seem to become more tender after roasting.
Note: Most grocery store meat departments will gladly slice cooked roasts to your specifications. It's usually a good idea to go where you bought the roast.
