    Roast Beef for Sandwiches

    Recipe Introduction


    I did this for a party and it was wonderful, wonderful. The meat is almost crispy on the outside, but very pink in the middle.


    List of Ingredients


    • 1 roast beef
    • Seasoning salt (mine or Tony Cachere's)
    • 1 can beef broth (or 2 cups homemade)
    • Garlic cloves, if desired (I pierce the roast in several places and insert slivers of fresh garlic)


    Instructions


    1. Preheat oven to 500 degrees. Place roast in open pan. Pour in beef broth. Roast exactly as follows:

    2. 4 1/2-5 pounds for 25-30 minutes

    3. 8-9 pounds for 40-45 minutes

    4. 11-12 pounds for 55-60 minutes

    5. Turn off oven. keep door closed for 2 hours.



    Final Comments


    Most high-heat recipes call for tenderloins, but I've done round and sirloin roasts with modest success. The tougher cuts seem to become more tender after roasting.

    Note: Most grocery store meat departments will gladly slice cooked roasts to your specifications. It's usually a good idea to go where you bought the roast.
