Shrimp Spread
This was originally a filling for cream puffs, but we also use it for finger sandwiches or cracker spread.
List of Ingredients
- 1 large cream cheese, softened
- Salt and cayenne to taste
- 1/2 pound cooked shrimp, chopped*
- 2-4 tablespoons mayonnaise
- Lemon juice to taste (@ 1/2 lemon)
- 1 teaspoon horseradish
- 4 drops Tabasco (opt.)
- 1 T. chopped chives or green onions
Instructions
- Mix ingredients together. Chill.
Final Comments
*Tuna, salmon, or clams may be substituted. For softer texture, use 8 ounces sour cream and 1 small cream cheese. Canned shrimp may be substituted for fresh.
If using as filling for cream puffs, fill puffs at the last minute to avoid them becoming soggy.
