    Spinach Dip

    From my good friend Susie S. Susie has a knack for making food attractive. She serves this in hollowed-out round bread loaves. It's a nice presentation.


    List of Ingredients


    • 1 package frozen chopped spinach, thawed and squeezed dry
    • 1 pint sour cream
    • 1 cup mayonnaise
    • 1 can water chestnuts, drained and chopped
    • 1 package dried vegetable soup mix (Knorr's is best)


    Instructions


    1. Mix ingredients together. chill. Serve with crackers in hollowed-out round bread loaves.


    Final Comments


    Guests dip the bread chunks and then tear apart the shell. I add extra chopped onion.

    For a healthier version, I substitute 2 cups yogurt cheese and 1-2 tablespoons reduced-fat mayonnaise for the sour cream and mayonnaise in the recipe above. I usually then add a little lemon juice.
