    Yogurt Cheese

    Recipe Introduction


    This simple technique allows us to make healthier versions of many old favorites.


    List of Ingredients


    • 1 large container plain non-fat yogurt


    Instructions


    1. Place yogurt in a large strainer lined with cheesecloth. Place the strainer over a bowl and cover lightly with plastic wrap. Let yogurt drain in refrigerator for several hours until thickened.



    Final Comments


    Add herbs to taste for dips. I sometimes add a little sugar or sweetener to cut the tartness.

    I save the liquid for use in bread baking.

    Those mesh permanent coffee filters do a great job for straining yogurt. Similar filters are available just for yogurt. These are much easier to use than cheesecloth.
