Banana Nut Bread
Another recipe from my old Good Housekeeping Cookbook.
For the first 37 years we were married, Dick resisted these sweet quick breads--said they weren't sweet enough for cake and too sweet for bread. All of a sudden, he's decided they're OK. In fact, he's been known to look at browning bananas and suggest I make bread with them. Old dogs, new tricks, I guess.
List of Ingredients
- 1 3/4 cups sifted flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt AND 1/2 teaspoon cinnamon (my addition)
- 1/3 cup soft butter
- 2/3 cup sugar
- 2 eggs
- 3 ripe bananas
- 1 cup chopped pecans or walnuts
- 1 cup raisins, floured (optional)
Instructions
- Preheat oven to 350 degrees. Grease a loaf pan.
- Sift dry ingredients.
- Thoroughly cream butter and sugar. Add eggs and beat until light and fluffy.
- Blend flour mixture alternately with mashed bananas into butter-sugar mixture. Stir in nuts. Do not overbeat.
- Turn into loaf pan. Bake 55 minutes or until knife inserted in loaf comes out clean. Let cool 10-15 minutes before removing from pan.
