Blueberry Bread
Blueberry muffin recipes are everywhere, but I searched a long time to find a bread recipe. This is from that old, old Better Homes and Garden Cookbook, 1953. It was a wedding gift and still often has just what I’m looking for.
2 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1/2 cup chopped nuts
2 well-beaten eggs
1 cup fresh blueberries
1 cup milk
3 tablespoons melted shortening or salad oil
Recipe
Sift flour, baking powder, salt, and sugar; stir in berries and nuts. Add eggs mixed with milk and shortening; stir slightly.
Pour into paper-lined loaf pan [9 1/2 x 5 1/4 x 2 3/4 inch pan]; let stand 30 minutes. Bake at 350 degrees for about 1 hour.
For Fruit Bread: Decrease sugar to 3/4 cup. Add the fruits below:
1/4 cup chopped citron
1/4 cup chopped currants
This bread, in my opinion, is better than muffins. Even in my hot oven, it turned out moist. I sprinkle a little sugar on top as soon as it comes from the oven.
