Bran Muffins
Nice for breakfast. The dough keeps in the refrigerator for several weeks. We just pull off a little dough and bake as needed.
List of Ingredients
- 1 15-ounce box of Raisin Bran
- 1 box brown sugar
- 1 quart buttermilk
- 5 cups flour (or 4 cups flour and 1 cup All-Bran)
- 4 eggs
- 1 cup oil
- 1 teaspoon salt
- 2 tablespoons baking powder
- 1 teaspoon vanilla
- 1 cup raisins, lightly floured
- 1 cup pecans, chopped (opt.)
Instructions
- Blend together until moistened. Do not overbeat. Spoon into greased muffin pans. Bake at 400 degrees for 12-15 minutes.
Final Comments
I often use cupcake papers for these muffins.
