    Bran Muffins

    Nice for breakfast. The dough keeps in the refrigerator for several weeks. We just pull off a little dough and bake as needed.


    List of Ingredients


    • 1 15-ounce box of Raisin Bran
    • 1 box brown sugar
    • 1 quart buttermilk
    • 5 cups flour (or 4 cups flour and 1 cup All-Bran)
    • 4 eggs
    • 1 cup oil
    • 1 teaspoon salt
    • 2 tablespoons baking powder
    • 1 teaspoon vanilla
    • 1 cup raisins, lightly floured
    • 1 cup pecans, chopped (opt.)


    Instructions


    1. Blend together until moistened. Do not overbeat. Spoon into greased muffin pans. Bake at 400 degrees for 12-15 minutes.


    Final Comments


    I often use cupcake papers for these muffins.
