    Buttermilk Griddlecakes

    From the 1955 Good Housekeeping Cookbook. The recipe is doubled for us, but may easily be halved for smaller capacities.


    List of Ingredients


    • 2 cups sifted flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 eggs, separated
    • 2 cups buttermilk
    • 2 tablespoons melted butter


    Instructions


    1. Sift dry ingredients. Beat egg whites with whisk until moist peaks form. In medium bowl, whisk together the egg yolks and buttermilk just until blended. Stir in the flour mixture and then the melted butter. Stir until smooth. Fold in egg whites.
    2. Drop by tablespoons onto a hot griddle. Cook until cakes are puffy and bubbly. Turn. Cook on other side.


    Final Comments


    Although this recipe calls for beaten egg whites, it's easy to do. The cakes have a nice tang.
