    Cornbread Dressing

    List of Ingredients


    • 2 large onions, minced
    • 2-3 ribs celery, minced
    • 1 bell pepper, minced
    • 2 cloves garlic, minced
    • 1 recipe cornbread, crumbled
    • pinch thyme
    • 1/4 cup melted butter
    • 2 cups chicken broth
    • 2 eggs, beaten
    • 2-3 hard-cooked eggs, chopped (opt.)


    Instructions


    1. Saute minced vegetables in butter. Combine with remaining ingredients. Taste for seasonings. Adjust liquid.

    2. If stuffing bird, do so just before roasting to ensure food safety. Bake remainder in a lightly buttered baking dish until lightly browned.

    3. Oven temperature may range between 325 and 400 degrees depending on what else has to be baked.

    4. November 2001 inspiration: Combine ingredients in a plastic (not a zipped lock type) bag. Knead the bag to distribute ingredients. Squeeze the contents into turkey cavities--it will help if someone holds the cavities open, but it's possible to do it solo.



    Final Comments


    The school cafeteria makes the dressing and turkey combined in a casserole. I sometimes then make a casserole with leftover turkey, dressing, and gravy.

    The November 2001 method eliminates almost all of the mess. Trying to fill a turkey with a large spoon often loses much of the stuffing.
