Cornbread Dressing

List of Ingredients
- 2 large onions, minced
- 2-3 ribs celery, minced
- 1 bell pepper, minced
- 2 cloves garlic, minced
- 1 recipe cornbread, crumbled
- pinch thyme
- 1/4 cup melted butter
- 2 cups chicken broth
- 2 eggs, beaten
- 2-3 hard-cooked eggs, chopped (opt.)
Instructions
- Saute minced vegetables in butter. Combine with remaining ingredients. Taste for seasonings. Adjust liquid.
- If stuffing bird, do so just before roasting to ensure food safety. Bake remainder in a lightly buttered baking dish until lightly browned.
- Oven temperature may range between 325 and 400 degrees depending on what else has to be baked.
- November 2001 inspiration: Combine ingredients in a plastic (not a zipped lock type) bag. Knead the bag to distribute ingredients. Squeeze the contents into turkey cavities--it will help if someone holds the cavities open, but it's possible to do it solo.
Final Comments
The school cafeteria makes the dressing and turkey combined in a casserole. I sometimes then make a casserole with leftover turkey, dressing, and gravy.
The November 2001 method eliminates almost all of the mess. Trying to fill a turkey with a large spoon often loses much of the stuffing.
