    Edith Booth's Banana Bread

    Edith Booth was one of Mamma's best friends. She was very kind when I was a new bride and learning to cook. This was one of her specialties. I duly copied the recipe into my personal cookbook and then forgot it. Dick didn't like quick breads that were sweet. He claimed they were too sweet to be called bread, but not sweet enough to be cake.

    Forty years later, I exercised my stubborn steak and once again prepared something I was certain Dick would reject out of hand. Strangely, he didn't. So, for the past year I've been making banana bread, searching for the perfect recipe. I bet I've tried two dozen. A few weeks ago I looked at my old, old recipe book and found Edith's. It's really good.

    1 stick butter, softened slightly
    1 cup sugar
    2 eggs
    1 teaspoon vanilla
    3 mashed bananas
    2 cups flour
    1 teaspoon baking powder
    1/4 t. baking soda
    1/2 cup walnuts, chopped
    1/2-1 cup raisins, floured (optional)

    Recipe




    Mix butter and sugar. Add eggs, vanilla and mashed bananas. Mix well. Add dry ingredients. Mix just to combine.

    Turn into a greased and floured baking pan. Bake at 350 degrees and 1 hour. Let sit in baking pan until cool enough to handle without hot pad. Turn out on wire racks to finish cooling.

    Serve with cream cheese or cream cheese with strawberries.

    Since I'm now back to baking sweet quick breads, I've tried pumpkin, blueberry, cranberry, and applesauce. I took several to Leslie's for Christmas. One morning she pulled one out of the freezer and the kids gleefully tore into it. I eventually sat down for breakfast. Ben had just gotten his second piece. He said, "Umm, Grandma, I like your banana bread." I looked at it a second time and said, "Thanks, only it's pumpkin." That did it. Ben quietly returned the bread to his plate and that's where we found it when we cleared the table. Pumpkin was fine until I'd named it. Kids are funny!
