Hushpuppies I

Catfish and hushpuppies were exotic foods when I was a young bride in 1961. Now, thanks to former agriculture commissioner Jim Buck Ross who promoted catfish farming in Mississippi, southern fried fish is becoming common all over the country. This is our favorite hushpuppy recipe.





List of Ingredients



• 1 cup white cornmeal
  
• 1/2 teaspoon salt
  
• 1 1/2 teaspoons baking powder
  
• 1 beaten egg
  
• 1/4 cup milk
  
• 2 tablespoons oil
  
• 1 cup minced onion
  






Instructions



1. Mix ingredients together. Drop from spoon into hot oil while frying fish. Cook until browned.
