Mamma's Cornbread

List of Ingredients
- 2 cups water-ground cornmeal
- 1 cup plain flour (or self-rising with baking powder reduced to 2 teaspoons)
- 1/4 cup shortening (Crisco or vegetable oil)
- 1 cup milk or enough to make a soft dough that will pour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons sugar
Instructions
- Measure dry ingredients. Beat egg and milk together. Blend with flour.
- In a heavy pan, melt the shortening or heat the oil. Swish in pan so it is well-greased, then add to rest of the mixture. Pour into pan.
- Bake at 350 degrees for about 20 minutes.
Final Comments
Mamma added a note: "May need to bake at 400 degrees. Watch to see if browned well."
I imagine that the 400 degree oven is better than 350.
