    Mamma's Cornbread

    From Mamma's notebook.


    List of Ingredients


    • 2 cups water-ground cornmeal
    • 1 cup plain flour (or self-rising with baking powder reduced to 2 teaspoons)
    • 1/4 cup shortening (Crisco or vegetable oil)
    • 1 cup milk or enough to make a soft dough that will pour
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 2 teaspoons sugar


    Instructions


    1. Measure dry ingredients. Beat egg and milk together. Blend with flour.
    2. In a heavy pan, melt the shortening or heat the oil. Swish in pan so it is well-greased, then add to rest of the mixture. Pour into pan.
    3. Bake at 350 degrees for about 20 minutes.


    Final Comments


    Mamma added a note: "May need to bake at 400 degrees. Watch to see if browned well."

    I imagine that the 400 degree oven is better than 350.
