Mamma's Dilly Bread
Mamma got this recipe from her friend Mary Clyde, a lovely lady from Durham. Dr. Clyde was a professor at Duke when Dick's dad was head of AFROTC there. They remained good friends for over 40 years.
List of Ingredients
- 1 package dry yeast
- 1/4 cup warm water
- 1 cup creamed cottage cheese, heated to lukewarm
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 tablespoon minced instant onion
- 1 tablespoon butter, melted
- 2 tablespoons dill seed*
- 1/4 teaspoon soda
- 2 1/4 cups plain flour
Instructions
- Soften yeast in warm water.
- Combine in mixing bowl the warmed cottage cheese, sugar, onion, melted butter, dill seed, salt, soda, egg and softened yeast. Add flour, beating well after each addition.
- Cover and let rise in a warm place (85-90 degrees)until light and double in size, somewhat over an hour.
- Stir down and turn into a well-greased 8-inch round casserole (1-1 1/2-quart size). Let rise until light, 45-60 minutes.
- Bake at 350 degrees about 35 minutes. Brush with soft butter and sprinkle with salt before serving.

*Another dilly bread recipe very similar to this calls for 1 tablespoon dry dill week or 2 tablespoons fresh dill, finely chopped. [I prefer the fresh dill.[
