Mamma's Spoonbread 2

List of Ingredients



• 1 cup cornmeal
  
• 2 cups milk
  
• 4 eggs
  
• 1 tablespoon sugar
  
• 3/4 teaspoon salt
  
• Butter the size of an egg
  






Instructions



1. In double boiler, make mush of meal and milk. [Mamma's recipe doesn't include the following, but I expect no cooling would coddle the eggs.] Cool until slightly warmer than room temperature.
   
2. Add egg yolks, then dry ingredients and butter.
   
3. Beat egg whites until very stiff and fold into mixture.
   
4. Bake in slow oven (325 degrees) about 45 minutes or until brown.
