Mom's Cheese Bread
Mom invented this because Dad always bragged that his mother could do wonderful things with potatoes. I've never seen a recipe anywhere close to this. It's more of a side dish than a bread, but whatever----it's a keeper.
List of Ingredients
- 1 recipe bread dough*
- 2 cups mashed potatoes, leftovers are fine
- 1 cup grated sharp cheese plus extra for topping
- 1/2 cup milk
- Salt and pepper to taste
- Butter
- *Mom used hot roll mix; I've used frozen bread dough, thawed;
- the best dough is half a recipe of my sourdough bread.
Instructions
- Prepare dough. Let it rise. Flatten to fit a greased 13x9x2" pan. Dough should be about 1/4-3/8" deep and halfway up the sides of the pan.
- Mix remaining ingredients. Spread over dough. Let rise about 20 minutes.
- Sprinkle with more cheese, a little milk and salt and pepper. Dot with butter. Bake at 400 degrees about 40 minutes or until dough is baked and potatoes have a light brown shine.
- Let stand 20 minutes before cutting into squares. Serve hot or at room temperature.
Final Comments
Wonderful with roast pork.
I often make this when I have leftover mashed potatoes the day I make bread. The potato water works well as the liquid for bread, too.
My sister Jane brings this to parties. It's a good recipe for occasions when you have to bring a dish.
I imagine that pizza dough or foccacia would work OK, although the foccacia would certainly add new herb flavorings.
