    Our Favorite Cornbread

    This goes back to the first year we were married. We bought a bag of stone ground meal (I didn't even know what it was, but Dick thought he'd found a treasure) and this recipe was on the back.


    List of Ingredients


    • 2 cups cornmeal, preferably white
    • 1 teaspoon salt
    • 3 teaspoons baking powder
    • 2 tablespoons sugar
    • 2 eggs, beaten
    • 1 1/2 cups milk
    • 4-5 tablespoons oil


    Instructions


    1. Heat oil in heavy castiron skillet in 450-degree oven while oven preheats, about 5 minutes.
    2. Stir dry ingredients together. Combine eggs and milk and then add to dry ingredients. Stir in hot oil. Quickly pour the batter into the hot skillet.
    3. Bake at 425-450 degrees about 20 minutes.


    Final Comments


    This stands up to any cornbread recipe--pretty good for a Yankee.
