Our Favorite Waffles
This recipe came from the 1955 Good Housekeeping Cookbook, one of the most helpful gifts I received when we married. Leslie likes this because it's a one-bowl recipe. Many waffle recipes call for stiffly beaten egg whites. This is easier--and it's delicious. I've increased the proportions to accommodate my family's enthusiasm.
List of Ingredients
- 3 cups sifted flour
- 4 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt (or a little more)
- 3 cups buttermilk
- 6 eggs, well beaten
- 1 1/2 cups melted butter or oil
Instructions
- Sift together the dry ingredients. Combine eggs and buttermilk. Add to flour mixture. With electric mixer at medium-high speed, beat until smooth. Stir in butter. Bake in preheated waffle iron.
Final Comments
In the rare instance where you have leftover batter, refrigerate and make pancakes the next morning.
