Sourdough Pancakes
This is an adaptation from the Frugal Gourmet. I often make these if I have a little proofed starter leftover when I bake bread.
List of Ingredients
- 1 cup proofed starter
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs, beaten
- 1/2 cup milk
- 1/3 cup melted butter
Instructions
- Mix dry ingredients in a large mixing bowl. Mix eggs, milk and melted butter in a separate bowl (a 2 cup measuring cup is just right).
- Stir flour and egg mixtures into the starter sponge, beating until fairly smooth. Let rest about 20 minutes.
- Cook on a hot, lightly greased griddle, turning once.
