    Sourdough Pancakes

    This is an adaptation from the Frugal Gourmet. I often make these if I have a little proofed starter leftover when I bake bread.


    List of Ingredients


    • 1 cup proofed starter
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 2 eggs, beaten
    • 1/2 cup milk
    • 1/3 cup melted butter


    Instructions


    1. Mix dry ingredients in a large mixing bowl. Mix eggs, milk and melted butter in a separate bowl (a 2 cup measuring cup is just right).
    2. Stir flour and egg mixtures into the starter sponge, beating until fairly smooth. Let rest about 20 minutes.
    3. Cook on a hot, lightly greased griddle, turning once.
