This recipe came from the back of a King Arthur Flour bag. It is outstanding.
List of Ingredients
2 cups lukewarm water or milk
1/2 cup honey or molasses
2 tablespoons (or 2 packets) yeast
3 cups whole wheat flour
1 large egg, beaten
2 teaspoons salt (or more to taste)
1/4 cup oil
3-4 1/2 cups white flour
Instructions
Pour the liquid into a mixing bowl. Add 1 tablespoon honey, the yeast and the whole wheat flour. Cover and let work at least 20 minutes (or several hours).
Mix in remaining ingredients and 3-3 1/2 cups white flour, 1/2 cup at a time, stirring until dough pulls away from sides of bowl.
Knead 8-10 minutes. Divide dough in half. Shape into loaves and place in two greased bread pans. Let rise about 1-1 1/2 hours.
Bake at 350 degrees about 35-40 minutes.
To make rolls, place small portions of dough on a greased cookie sheet. Bake at 375 degrees for 15-20 minutes.
Final Comments
Note: I combine the proofed mixture and remaining ingredients with about 3 cups white flour in my mixer bowl, setting the speed at 2 and beating for five minutes.
