Beef 'n' Chile Stew
The idea for this came from the internet. I combined it with my Southwestern Grits [See Grains] recipe. We thought it was very good.
List of Ingredients
- About 2 pounds round steak, cut into bite-sized pieces, lightly floured
- 1 large onion, cut into 1/2" dice
- 2 cloves garlic, minced
- 2 tablespoons oil
- 1 cup dry red wine
- 1 small can tomato sauce
- About 1/4 cup red wine vinegar
- 2 cans chopped green chiles
- 1 teaspoon oregano, preferably Mexican
- 1/2 teaspoon ground cumin
- Salt and pepper
Instructions
- Brown beef cubes. Add onions and garlic. Saute until onions are translucent. Stir in dry spices and allow to cook briefly until fragrant. Add remaining ingredients. Simmer 2-3 hours.
Final Comments
This is also good served in tortillas.
