Beef Heart Stuffed with Rice Dressing
Heart is economical (probably because so few of us buy it) and healthy (it's very low in fat). This recipe is delicious, a real treat for us.
List of Ingredients
- Rice dressing:
- 1 large onion, chopped
- 2-3 ribs celery, chopped
- 2 cloves garlic, minced
- 2-3 ounces dried mushrooms, rehydrated and chopped
- 1/2 cup fresh parsley
- 1 cup cooked brown or white rice
- 1/2-1 cup cooked wild rice
- 2-3 tablespoons pine nuts, toasted
- 1 beef heart
- 5-6 slices bacon
- 2 cups beef broth
Instructions
- Clean beef heart, removing fat and membranes. Set aside.
- Prepare rice dressing: Saute onions, celery, and garlic. Add rehydrated mushrooms and parsley. Stir in rice, wild rice, and pine nuts.
- Stuff heart with rice mixture. Tie with string to maintain shape. Place on rack in baking dish. Drape bacon slices on top. Pour beef stock over all. Bake at 325 degrees about 3 hours, basting with stock if necessary.
- If rice dressing exceeds capacity of heart, pour remainder into an oil-sprayed casserole and bake last 45 minutes along with heart.
- Allow heart to stand about 20 minutes before slicing. While heart stands, thicken juices with a little flour and water for gravy.
Final Comments
Vegetables such as onions, carrots, potatoes, etc. may be added the last hour or so.
