Beef and Mushroom Stew
This turned out surprisingly well. I had some beautiful mushrooms and wanted a stew that would complement them. I used a small steak for Dick and I ate mostly mushrooms and onions over rice. Very nice.
List of Ingredients
- 1 round steak, cut into bite-sized pieces
- Flour
- Oil
- 2 pounds large mushrooms, sliced into 1/4-inch slices
- 2 large onions, sliced in 1/2-inch slices plus 1-2 cloves garlic (optional)
- 2-3 tablespoons tomato paste
- 1 tablespoon miso
- 1 cup dry red wine
- 1 package beef gravy mix
- 1-1 1/2 cups water
- Salt and pepper
Instructions
- Flour and season steak pieces. Brown well in a little oil (I used about 2 tablespoons total.) Remove from pan and keep warm.
- Saute onion rings until soft and beginning to brown. Add 1-2 cloves garlie, if desired, towards the end of sauteing. Remove from pan and keep warm.
- Turn heat to medium-high. Add just a little oil. Saute mushrooms until lightly browned.
- Add tomato paste. Stir a bit. Return meat and onions to pan.
- Add miso paste. Combine water and beef gravy mix. Stir into pan. Let simmer just a few minutes.
- Add wine. Bring to boil and simmer for 1-1/2 hours. Taste for seasoning. Add salt and pepper as needed.
- Serve over rice or noodles.
Final Comments
I normally shy away from packaged mixes, but occasionally a package of gravy mix comes in handy. In this case, it intensified flavor that was lacking because I'd used so little meat.
