    Bodacious Chili

    List of Ingredients




    From January 1995 Southern Living, this has a nice spice blend. I've made a few changes. The original called for garbanzos, but we prefer other beans.

    2 lbs. chuck roast, cut into bite-sized cubes
    2 onions, chopped
    3 ribs celery, chopped
    1 green pepper, chopped
    1 8 oz. pkg. fresh mushrooms, sliced
    2 jalapenos, seeded and chopped
    4 cloves garlic, minced
    3 T. olive oil (opt.)
    2 T. cocoa
    2 T. pure chile powder
    1 t. ground cumin
    1 t. oregano
    1 t. paprika
    1 t. turmeric
    1/2 t. salt
    1/2 t. ground cardamom
    1 t. pepper
    1 T. molasses
    1/2 c. dry red wine
    1 qt. tomatoes
    4 cans kidney beans, pintos, red beans (or 3 cans kidneys and 1 can garbanzos)

    Recipe



    Sear beef cubes in oil. Add vegetables. Sauté until soft. Add spices. Add molasses and remaining ingredients. Simmer 1-2 hours. Serve over rice, if desired.

    Top with:
    1 c. sour cream
    1/3 c. salsa
    2 T. mayonnaise
    1 t. chili powder
    1/2 t. onion powder
    1/2 t. curry powder
    dash red pepper
    1 T. lemon juice
    1 t. Dijon

    Combine and chill while chili cooks. Also top with:
    shredded cheddar
    chopped green onions
