1 beef heart, cleaned and cut into bite-sized pieces
flour, salt and pepper for dredging heart cubes
oil, as needed
1-2 teaspoons salt
1 can beef broth
pepper, to taste
3-4 sliced carrots
3-4 medium potatoes, peeled and cubed
2 onions, thinly sliced
Instructions
Brown the seasoned and floured heart cubes in a little oil. When all are browned, remove to a plate and keep warm. Return the heart cubes to the pan and add salt, broth, and pepper. Cover and simmer 2-3 hours.
Add carrots and potatoes to simmering stew. Cook about 45 more minutes.
Final Comments
This is nice served with a salad and sourdough bread.
