    Braised Heart Stew

    Another tasty treat--really.


    List of Ingredients


    • 1 beef heart, cleaned and cut into bite-sized pieces
    • flour, salt and pepper for dredging heart cubes
    • oil, as needed
    • 1-2 teaspoons salt
    • 1 can beef broth
    • pepper, to taste
    • 3-4 sliced carrots
    • 3-4 medium potatoes, peeled and cubed
    • 2 onions, thinly sliced


    Instructions


    1. Brown the seasoned and floured heart cubes in a little oil. When all are browned, remove to a plate and keep warm. Return the heart cubes to the pan and add salt, broth, and pepper. Cover and simmer 2-3 hours.
    2. Add carrots and potatoes to simmering stew. Cook about 45 more minutes.


    Final Comments


    This is nice served with a salad and sourdough bread.

    A few dried chiles never hurt a stew.
