Recipe Introduction
Jane and I love our crockpots. This morning I have steel-cut oatmeal ready for breakfast. It has cooked all night and is perfect. None of this laborious cooking and stirring and waiting forever for it to be ready.
But, I digress. This stew is both easy and delicious.
List of Ingredients
Combine in bottom of crockpot:
3 potatoes, cut into 1-inch chunks
2 onions, cut into chunks
5 large carrots, cut into 1-inch chunks, or 3/4-1 bag baby carrots
Mix together and place on top of vegetables:
2 pounds beef stew meat
1 can diced tomatoes
2 cloves garlic, minced
2 tablespoons paprika
1 1/2 teaspoons salt
Cover and cook about 1 hour on HIGH, 7-8 hours on LOW. Stir in 1/2 cup instant potato flakes. Mix well and let thicken.
Stir in 1/2-1 cup sour cream.

Note: I sometimes brown the beef cubes.
