    Mom's Spanish Steak

    A family favorite. Mom made this for family gatherings until she was 92.


    List of Ingredients


    • 1 round steak, cut into 5 or 6 pieces
    • flour
    • salt and pepper
    • 1 1/2 cups chopped onion
    • 1 cup diced bell peppers
    • 2-3 cloves garlic, minced
    • 1 28-ounce can diced tomatoes (or 1 quart homecanned)
    • Parmesan
    • sugar, if desired
    • 1 cup rice
    • 1/2 cup water


    Instructions


    1. Pound steak into 1/4-inch thick pieces making certain the flour-salt-pepper mixture is well-incorporated.
    2. Brown steak on all sides. Remove from pan. Saute onions and peppers. Add garlic and cook a few minutes more.
    3. Return meat to pan. Cover with tomatoes. Add a little Parmesan, salt, pepper and sugar. Simmer about an hour.
    4. Add rice and water. Simmer 20 minutes or until rice is tender.


    Final Comments


    The rice may be cooked and served separately, if desired. I also add a few dried chiles or some jalapeno.
