Pear Cake
I found this recipe on the internet a long time ago and just got around to trying it. It is incredibly easy and really good. I've altered the recipe a bit--naturally.
List of Ingredients
4 cups fresh pears, grated
1 cup chopped nuts
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon (or more to taste)
1/2 teaspoon ground ginger
3/4 cup oil
2 cups sugar (1 cup brown and 1 cup white is nice)
3 cups flour
2 teaspoons soda
2 eggs, beaten (or 3 small eggs)
1 teaspoon vanilla
2 tablespoons lemon juice
Recipe
Mix pears and sugar together; set aside until juice accumulates for 1 hour. Add oil, vanilla and beaten eggs to pear mixture. Sift dry ingredients and add to pear mixture. Fold in nuts. Do not use mixer to mix dry ingredients. Pour into floured and greased tube pan and bake at 350 degrees for 1 hour and 15 minutes.
Note: 1 cup floured raisins or other dry fruit would be nice.
