Mamma's Sugar Cookies and Variations
Mamma had this recipe in her notebook. Dick doesn't remember her making these, so they may have been a favorite in the years after the kids left home.
List of Ingredients
- 1 cup shortening
- 3/4 cup sugar
- 1 egg
- 1 tablespoon milk
- 1/2 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Fruit Filling for Variation 2:
- 1 cup chopped dates, figs, or raisins
- 1/3 cup sugar
- 1/4 cup water
- 1 teaspooon grated lemon rind
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- chopped nuts
Instructions
- Mix soft shortening and sugar thoroughly. Add egg; beat well. Add milk and vanilla.
- Sift dry ingredients together; add to creamed mixture. Chill.
- Roll dough very thin on floured board. Cut into fancy shapes or into round cookies.
- Place on a greased baking sheet, 1/2 inch apart.
- Bake at 350 degrees 8-10 minutes until lightly browned.
- Variation 1: Sand tarts. Before baking cookies, brush lightly with egg white diluted with a little water, and then sprinkle with a mixture of sugar and cinnamon.
- Variation 2: Fruit-filled cookies. Mix fruit filling ingredients together.
Make recipe for sugar cookies. Roll 1/8 inch thick.
- Cut half the dough with a plain round biscuit cutter. Cut other half with doughnut cutter the same size as the biscuit cutter.
- Spread plain rounds with canned mincemeat, jelly, jam, or fruit filling.
- Place remaining rounds cut with doughnut cutter on top. Press edges together with fork.
- Place on baking sheet 1/2 inch apart.
- Bake at 400 degrees 8-10 minutes.
