Crockpot Caramelized Onions

This is best with Vidalias or Texas sweet onions.
Fill crockpot with onions sliced 1/2-3/4" thick. Lightly sprinkle salt over onions. Sprinkle 1/2 cup dark brown sugar, if desired over onions. Dot with butter (to taste) or lightly spray with olive oil.
Cook on LOW 24-36 (Yes!)hours until onions are mahogany colored. I do this in my large crockpot and use about 8 pounds of onions. These are lovely with almost any meat, but especially good on hamburgers or steak. The finished dish freezes well.
Recipe
On occasion, I've sliced the onions very thin and the result is almost like onion jam, thick and mushy. Pretty good, too.
This recipe may also be done on top of the stove. I start with a little oil and let the onions cook all afternoon. The texture seems to soften more than those in the crockpot.
