Easy Red Beans and Rice
List of Ingredients
This may also be done with black beans.
4 cans red beans, undrained (or 1 pound red beans cooked)
2 onions, chopped
1 jalapeno, minced
2 cloves garlic, minced
1 teaspoon chili powder (or to taste)
1 bay leaf
1/2 teaspoon cumin (opt.)
1 package Cajun sausage (I use venison sausage or kielbasa)
Sausage may be fried and drained to reduce fat, but it may also be cooked as is.
Place all ingredients in crockpot. Cook on HIGH for first hour. Reduce heat and cook about 6 hours more. Serve over rice.

Actually, any number of beans may be used for this. Pintos do very well.
The possibilities for variation are almost limitless. While the above recipe is fairly authentic Cajun, it is just a stew. So, here are just a few ideas:
Substitute ground beef for sausage
Substitute chicken (hindquarters are nice) for sausage
Add 4-5 diced potatoes
Add a can of corn
Use 2-3 varities of beans
Add canned tomatoes
Add Rotel tomatoes
After a few days of leftovers, toss what's left into the food processor and make bean dip for a Mexican meal.
