    My Crockpot Barbecued Chicken

    List of Ingredients





    3 large onions, sliced 1/2" thick
    2 bell peppers, julienned 1/4" slices
    6 chicken hindquarters, trimmed of noticeable fat
    1/2 bottle favorite BBQ sauce diluted w/ 1/2 cup red wine

    Place onions and peppers on bottom of crockpot. Place hindquarters over vegetables. Pour sauce over all.

    Cook on HIGH one hour. Reduce to LOW and cook another 4-5 hours.

    The flavor changes with the barbecue sauce used. If the chicken cooks until meat falls from the bones, it makes good sandwiches. If cooked until tender, but not falling from bones, I serve it over rice.

    I've also made this with the barbecue sauce I use for sloppy joes.

    Oh yes, a few chiles in the sauce don't hurt a bit.
