Recipe Introduction
As a kid, Dick ordered this at the Columbia Restaurant in Tampa. It is really a great dish--I just forget to make it.
List of Ingredients
1 fryer, cut up
Olive oil
2 cloves garlic, minced
1 onion, chopped
1 can diced tomatoes
1 quart water (or a little more)
1 bay leaf
2 tablespoons salt
1 pepper, chopped
Pinch saffron
2 cups rice
1/2 can LeSeur peas
2 pimientos
Recipe
Fry chicken in oil. Add onion and garlic. Cook until onions are soft. Add tomatoes and water; boil for five minutes. Add bay leaf, salt, rice, saffron, and bell pepper. Pour into casserole. Bake about 350 45-60 minutes until rice is soft and liquid is mostly absorbed. Garnish with peas and pimientos.
