Chicken Spaghetti

Lower in calories than regular spaghetti sauce and just as good. This can be simmered all day on low in a crockpot. If I make it that way, I saute the onions and
peppers in a little butter in the microwave and then just mix everything else in the crockpot.
Saute:
2 large onions, finely chopped
1 large bell pepper, finely chopped
2 cloves garlic, minced
2-3 cups cooked chicken
Add (measurements are guesses):
2-3 bay leaves
1 teaspoon oregano
pinch thyme
pinch basil
2 tablespoon brown sugar
1/2 teaspoon dry mustard
dash Worcestershire
2-3 dried red peppers
Mix well and then stir in 1 lg. can tomato paste. Stir to blend and reduce raw taste.
Add:
2 cans tomato sauce
1-2 cans tomatoes with green chiles
1/2 cup Parmesan
Simmer all day or at least 3 hours.
Serve over cooked spaghetti.
Note: 2 jars of good commercial spaghetti sauce may be used in lieu of tomato paste, sauce, and canned tomatoes above.

I try to keep homemade chicken stock on hand, so I frequently have cooked chicken to use, too. When I ask Dick what he'd like, this is almost always his first choice.
This is also a good sauce with lasagna. Simple substitute this for any meat sauce in lasagna recipes.
When I'm rushed or lazy (the more likely attribute), I use commercial sauce in place of the paste and tomato sauce above. I usually use the remaining ingredients.
This is nice with toasted buttered bread crumbs, crushed chiles, and Parmesan.
