Good Ol' King Ranch Chicken

Here we go again with the creamed soups. This is one of those made-for-creamed-soup recipes a soup company devised back in the '60's. It's good if guests like Mexican, even though afficionados would sneer at the Mexican label. Serve with salad of avocado, tomato, and onions on lettuce with Italian dressing.
Stew 1 chicken. Cool, debone. Reserve broth for another day.
Cut 1 pkg. corn tortillas in 1" strips and then in half.
Mix together:
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup milk
1 onion, chopped fine
1 can tomatoes and green chiles
1 small can green chiles, chopped or 2 fresh jalapenos, minced
Shred:
1/2 pound Monterey Jack cheese
1/2 pound sharp cheddar cheese
Lightly butter deep casserole and layer:
1/2 tortilla strips
1/2 of chicken
1/2 soup mixture
1/2 cheeses
Repeat, ending with cheese.
Bake at 300 degrees about 1 hour.

I make this up in two casserole dishes because the recipe makes a huge amount. I freeze one that I don't bake until I thaw it for another meal.
For variety, use canned tomatillas instead of the canned tomatoes and chiles.
