Italian Chicken

I found this recipe in the newspaper a few years ago and like the crunchy texture. The Italian seasoning is a bit different from anything else I make.
Combine:
1 1/2 cup dry bread crumbs
1 teaspoon basil
1 teaspoon Italian seasoning
1/w teaspoon salt, pepper
Dip cut-up chicken pieces in a slightly beaten egg and then in breadcrumb mixture.
Heat skillet. Add 2 T. oil. Brown chicken pieces and then place in casserole. Bake covered at 350 degrees about 1 hour. Uncover the last 15 minutes.
In frypan, saute
1 green bell pepper, sliced
1 red bell pepper, sliced
1 clove garlic, minced
1 red chile pepper, minced
1 T. wine vinegar
Add: 1/4 c. dry red wine
Simmer 5-10 minutes until peppers are tender.
Spoon over chicken. Sprinkle with 2 T. Parmesan. Serve with pasta or rice.
This is also good with fish. Onions and/or mushrooms may be added.

Note that this does not have tomatoes. I sometimes use boneless breasts and make this entirely on top of the stove. From start to finish, this version takes about 20 minutes.
