When Jane goes to the house on a lake in New York, she has time to play in the kitchen. She tried this recipe and liked it so much, she decided to share it.
List of Ingredients
- 4 chicken drumsticks
- 4 chicken thighs
- 2 cans (15 ounces) black beans, undrained
- 1 cup cubed mango or 1 can (8 ounces) sliced peaches, drained and chunked
- 1 tablespoon grated gingerroot
- 1 teaspoon finely shredded lime peel
- 2 tablespoons lime juice
- 1/2 teaspoon salt
- 1 cloved garlic, finely minced
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 375. Place chicken with skin side up in a rectangular baking dish. Bake 40 minutes. Remove accumulated fat.
- Combine remaining ingredients. Spoon over and around chicken.
- Cover and bake 30 minutes or until juices run clear when centers of thickest pieces are cut.
Final Comments
Jane's variations: Use 2 chicken breasts, cut in half. Brown in olive oil. Turn into lightly buttered baking dish. Add remaining ingredients. Cover and bake at 350 about 30 minutes. Remove cover and bake another 10 minutes to reduce juices.
She used half the remaining ingredients except for the garlic and onions which left the same, recommending that the next time she'd double those amounts.
