    Mamma's Chicken and Dumplings

    From Mamma's notebook.


    List of Ingredients


    • 1 cup flour
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1/4 cup shortening
    • 1/3 cup milk
    • Fresh-ground pepper


    Instructions


    1. Cut shortening into flour; add milk to form a moist dough.
    2. Drop by spoonfuls into boiling stock.






    3. Stock: Add chicken to cold water; bring to a boil; add quartered onion, carrot and fresh ground pepper and salt to taste. Simmer until chicken is tender and comes off the bones easily.
    4. Return chicken to pot. Bring back to a boil before adding dumplings.
    5. When all dumplings have been added, reduce to simmer and cook about 20 minutes.
