    My adaptation of several recipes

    Recipe Introduction


    Pronounced ay-tu-fay or a reasonable facsimile thereof. This is also good with shrimp.

    List of Ingredients




    Sauté:
    1/2 stick butter
    1 onion, chopped
    1 green pepper, chopped
    1-2 ribs celery, chopped
    2-3 cloves garlic, pressed

    Cook until soft. Sprinkle 2 tablespoons flour on top and stir in.

    Add 4 tablespoons tomato paste (I sometimes omit the paste.)

    Add:
    1 can chicken broth
    1/2 cup white wine
    1 teaspoon Worcestershire

    Simmer 10-15 minutes.

    Add:
    1 pound peeled shrimp or 1 package crawfish
    1/2 pound crabmeat (optional, I rarely bother)

    Simmer until seafood is cooked, about 20 minutes. Serve over rice.
