Leslie's Favorite Poached Fish

Recipe Introduction
Leslie was on a major diet several years ago and limited her meat/fish intake to just a little per week. I made this recipe several times because it's good and healthy.
List of Ingredients
4 fillets (salmon, amberjack, whatever)
1 red pepper
1 green pepper
1 leek
1 carrot
1 zucchini
1 rib celery
1 clove garlic, minced
1 small onion
1/2 cup frozen green peas
Recipe
Julienne all vegetables. In large sauté pan, bring 3 cups water and 1 cup white wine to boil. Boil 8 minutes.
Add fish. Simmer (do not boil) about 6 minutes.
Add vegetables. Cover and simmer about 5 minutes or until done as desired.
Serve fish on plate. Cover with vegetables. Add a nice flavored butter, if desired. See end of section.
Note: To vary this for dieters, change vegetable selections to include broccoli or cauliflower.
